Monti Trentini has made cheese for four generations, since 1925, beginning at the Caseificio Finco in Enego on the Asiago plateau. Milk comes only from neighbouring farms in Trentino, the Asiago plateau and the Veneto rangeland, and every step, from cheesemaking to ageing and packaging, happens in their own plants.
